Tasting Notes: From 100% grapes of Aleatico spent a month in the air. After a maceration of 3 months it was pressed and the dense juice, still partially must, was put in barrique in a room exposed to temperature changes, where it aged 7 years without being topped up, like “Rancio”. The result is a dense, unique wine that retains the typical aroma of aleatico and to this adds an infinite complexity thanks to both the drying and the long aging in oxidation.
