Tasting Notes: Typically earthy, spicy and herbal, this Gippsland contains all those characters (which will further develop in time) but is filled out with an intensely aromatic profile of pretty floral notes and pure, bright fruit flavour too. It smells of spring flowers. The palate is a different dimension entirely: it’s searingly fresh, cranberry, boysenberry, splashed with beet and rooted with twigs. It’s dry, spicy and seriously firm.
