The herbaceous character expected of SB is a quieter more refined layer in this example. The minerality is a core component of both the aromas and flavour package. Light-weight, crisp, dry and refreshing with a long finish. Balanced, well made and youthful. Serve with ceviche, Thai green curry, tomato and goat’s cheese tart.
