Tasting Notes: Grappa di Amarone is distilled according to the traditional method. Obtained from the pomace of Amarone wine, it is generally distilled around February, the period in which Amarone is drawn off. The pomace with high alcohol content, with many sugar residues, gives the grappa particular harmony and roundness of flavor on the palate.Â
For aging the distillate is placed in small barrels, from which it will only come after a long time, restoring all its characteristic flavor, calibrated and harmonious.
